Porcini Brodo

Mushroom Stock

Thyme sprigs – 10 ea
Garlic Clove(smashed) – 3 ea
Onion (diced) – 1 ea
Celery ribs (diced) – 3 ea
Olive Oil – 2 tbsp
Chili flake – pinch
Bay leaves – 3 ea
Sage leaves – 5 ea
Rosemary sprigs – 2 ea
Crimini mushrooms (chopped) – 12 oz
Dried Porcini mushroom – 4oz
Salt – 1 tbsp
White wine – 2 cups
Water (cold) – about 1 gallon

Raft

Chicken breast (skinless) – 4 oz
Garlic clove – 2 ea
Onion – ½ ea
Egg (with shell) – 2ea
Salt – pinch
Pepper – pinch
Carrot – 1 ea
Tomato (small) – 1 ea
Salt – 1 tbsp
White wine – 2 cups
Water (cold) – about 1 gallon

Preparation Procedure

Heat a large pot with the olive oil. Add all the ingredients for the “stock” portion of the recipe minus the white wine and water. Sweat the vegetables and aromatics until the onions are translucent. Add the white wine and reduce till liquid is almost gone. Add the water and bring the pot to a boil. Turn heat down and simmer for about 2 hours.

Remove the pot from heat and strain the stock though a fine strainer. Let cool.

To make the raft begin by dicing the chicken breast into 1×1 inch cubes, large dicing the onion and carrot, and quarter the tomato. Place chicken in a food processor with all the other ingredients for the raft (including the shell-on eggs). Pulse the mixture till there are no large chunks. Transfer the raft mix to a large pot (cold). Slowly add the cooled mushroom stock to the same pot trying not to mix up the raft too much. Place the pot over medium heat. As the stock heats up the raft will start to form. Be sure keep the stock at low simmer. With a ladle create a small well in the center of the raft. While the stock is clarifying place a double layer of cheese cloth over a large heat proof container to strain the liquid through. Ladle by ladle pull the clarified stock out of the pot and pour it through the cheese cloth. Once all the liquid is strained through the cheese cloth discard the raft and cool the brodo.
