Hello winter wonderland!  The Tennessee Mountain Cabin trip introduced an exciting format change to Backcountry Gourmet.  Rather than take another chef friend along, Kyle chose to invite Anna Carvill, a nordic ski and snowshoe instructor at Eldora Resort’s Nordic Center.  Eldora rents the Tennessee Mountain cabin for $80 per night during the winter season.  It is a charming and rustic cabin, a four mile hike or ski from the Nordic Center.

Kyle and Anna set out on a clear winter morning after getting outfitted with snowshoes and poles.  Along the way, they learned a bit of local history by passing through part of Eldora’s Historic Snowshoe trail.

When they arrived, the strengths of backcountry cabin cooking were immediately apparent.  Kyle built an open fire and smoking wall out of snow.  There, he could slow cook his lamb stew, and smoke the trout.  He also had the wood stove inside the cabin at his disposal, which proved to be an excellent stove top for baking his cornbread cake.  Enjoy this .wonderful winter episode!  It should air sometime in the winter of 2016
